There are only two things you need to know about baking. One – it’s a miracle that a pile of flour, some shortening, and a blast of heat can form the base for such a delicious food. Two – these raw materials are temperamental, moody and difficult, and will drive you nuts if your first attempts don’t turn out the way you hoped. If this happens to you, don’t give up! It really is worth taking the time to learn the art of baking, and once you’ve mastered it, you’ll be so proud of yourself you’ll wonder why you didn’t start years ago.
